Vegan Apple Cake

Vegan cakes don't just have to be for Veganuary, but this one works well as its moist and comforting, so suits the cold weather.


250g Plain flour

1 tsp bicarbonate

1 tsp baking powder

1 tsp cinnamon

1 tsp mixed spice

1 tsp vanilla sugar

1/2 teaspoon salt

1 tablespoon apple vinegar

125g of almond milk

200g light brown sugar

175g vegetable oil

150g apple puree ( make your own so it contains no sugar )

Apple for slicing and decorating

Our tin is 28cm by 23cm - but any brownie tin will work.


First mix all the dry ingredients together. We like to sift the flour as it makes the cake lighter.

Add the vinegar to the almond milk and leave it for a few minutes. Then add the oil add the sugar and the home made apple sauce.

Try to mix it all in gently, and its best not to over mix it.

Bake it in your oven at 180c for 25 minutes.
