This is one of those cakes, that is nourishing to make, mainly because there is so little washing up.
If you love chocolate and feel that the dark nights feel very dark, then give this a go. You need a cake tin that is around 19 or 20 cm. Grease and line it. Pre-heat your oven to 180c / Gas mark 4.
Ingredients
125g butter
125g water
40g cocoa powder
60g dark chocolate
80g dark muscovado
70g caster sugar
80g plain flour
1 tsp baking powder
3 eggs and 1 egg yolk
Method
Put the water and butter into a pan, heat this up until the butter is melted.
Remove from the heat and add the dark chocolate and the cocoa and mix while it melts. Then add both sugars. Now add the eggs and the egg yolk. Then weigh out the flour, here I use the bowl that the sugars were in (again minimising washing up) and add the flour and baking powder. Sieve this over the chocolate mixture, and mix. The mixture is very wet, so we normally put the cake tin on a tray in the oven.
Bake for 20 to 25 minutes.
For the icing, make any icing you like, we used a chocolate spread 100g and 100g butter, and 100g icing sugar and added a little bit of orange essence. Ice the following day or when completely cool.
And because its so tasty and so yummy, it will take some of the 'dark' away !
