Overnight morning fresh buns


Ingredients


100g rye flour

100g oats

600g white bread flour

15g fresh yeast

10g salt

700g water


Method


This is such an easy recipe. The thing you need is a mixer with a dough handle. And we love this recipe because you have fresh delicious buns in the morning for your family, friends and guests.


Weigh out the water and put this in the mixer. Then weigh out the other ingredients and add them all to the mixer.

Start on a low speed for 5 minutes and then put up to medium speed for 10 minutes, and then finally 3 minutes on max. The dough should come away clean from the bowl.


Put it in clean bowl, cover with clingfilm and leave in the fridge overnight.


The dough is very sticky, but with wet hands weigh out 70g balls, rolls them and place on a baking tray. Bake at 240c for 5 minutes and then reduce to 220 for 10 minutes.


They are ready by the time everyone has had their first cup of tea or coffee.
