These are so lovely, quick and easy to make. Perfect for a Sunday, whether its Mother's Day or not.
125g light brown sugar
60g dark chocolate (use good quality)
125g self raising flour
1/2 tsp bicarbonate
Heat your oven to 180c /325f or gas mark 4 and line two trays with baking paper. First melt the butter in a pan.
Weigh out the oats and put them on a tray and bake in the oven for 10 minutes. You are aiming for a little roast.
Stir in the sugar, to the melted butter, then the oats and the chocolate. Take the pan off the heat and let the chocolate melt.
Once the chocolate has melted add the flour and bicarbonate and the beaten egg. Place the mixture in the fridge for 15 minutes.
Then weigh out 50 grams of dough and rill them into golf balls and place them on the trays. This mixture makes 12.
Bake for 10 to 12 minutes. Check at 9 minutes - and look for cracks across the cookie.
Leave on the tray for 10 minutes and then remove onto a rack.
