Danish Summer Fruits Cake



This is such an easy cake to make, and is always so impressive. Choose any fruit you like.


Ingredients


225g soft butter

225g caster sugar

1tsp vanilla essence

200g 00 flour

4 eggs

25g cornflour

1/2 tsp salt

2 tsp baking powder

200g double cream, lightly whipped

200g strawberries or other summer fruit


Method


Line 3 tins with baking parchment. The ones we used for this recipe are 4 cm high and 20 cm across.


This delightful layer cake is best made with a stand mixer. Beat the sugar and butter together until very light and fluffy. This can sometimes take up to 10 minutes.


While this is whirring around, weigh out the 00 flour, cornflour, baking powder and salt.


Add the eggs one at a time, and make sure you mix fully each time to avoid the mixture seperating.


Sometimes it's good to add a little flour with each egg as this helps keep the mixture together.


Once you have added all the eggs, spilt the mixture across the 3 tins. Bake in your pre-heated oven at 180c for 20 minutes. Leave in the tin to cool and then place them on your rack.


Whip the cream. Build you cake by spreading the lightly whipped cream on the first cake layer and then slice the strawberries and add them to the cream.(see photo)


Place your next cake layer on top and repeat. Then add the final layer and decorate with whipped cream in the middle and chopped berries on top.


Enjoy on the day ! This will make 8 generous slices.
