Oat and Treacle Loaf

A delicious loaf made with store cupboard ingredients!


Ingredients

400g self raising flour

50g oats + a handful for decoration

200g buttermilk

100ml boiled water

1 large heaped tbsp black treacle

1 tsp bicarbonate of soda

 

Heat your oven to 180C and lightly grease. around cake tin (19cm) with olive oil.


Boil the water, and once boiled, pour 100ml into a measuring jug. Add the black treacle and let it dissolve into the boiling water. You can give it a stir or two to help it melt.


Weigh out the flour, oats and bicarbonate and combine in a mixing bowl. Weigh the buttermilk and then add to the flour, followed by the water and treacle mixture.


Quickly mix all the ingredients together until just combined. You don't want to over mix, as this will spoil the dough.


The dough is very sticky, so tip it out into the cake tin and shape with slightly damp hands. Sprinkle the top with oats​ and cut a cross in the dough with a sharp knife.


Bake for 30 to 35 mins, then cool on a rack. You will know its done by the sound it makes then when you tap it - it should sound hollow!
