These delicious kiks are best enjoyed warm, straight from the oven!
Ingredients
200g plain flour
40g cocoa powder
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp fine sea salt
200g unsalted butter
100g caster sugar
60g soft dark brown sugar
1 tsp vanilla extract
100g dark chocolate chips
1tsp sea salt flakes
Preheat the oven to 180C and line a baking sheet (or two!).
Sieve the flour, cocoa, baking powder, bicarbonate of soda and sea salt and mix together. Beat the butter, both sugars and vanilla together to a creamy mixture.
Add a spoon of the dry ingredients and stir into the butter and sugar until fully combined. Add the rest of the dry ingredients to the mixture in three batches and stir until you have a sticky brown dough that clumps together. Stir in the chocolate chips.
Divide the dough into 16 balls, each weighing about 45g. Roll each one into a ball and press down on the baking tray. Sprinkle sea salt flakes over each one.
Bake for 10 mins, until the cookies have spread and the top of each biscuit has cracked. Leave to cool for 5 mins, then transfer to a rack to cool. Wait as long as you can until biting into one!
